A bridge between two worlds: pasterma (basturma) is the dry charcuterie of the eastern Mediterranean — a beef loin coated in a thick paste of paprika, cumin, garlic and fenugreek (çemen) and air-dried. The Al-Andaluzza version uses halal Segureño-area beef and is cured in the Sierra de La Sagra. Gluten-free, deeply spiced flavour.
